Crab Spaghettini

Ingredients:

  • 3 tbs extra virgin olive oil
  • 100g sand crab meat
  • 1/2 tbs finely-diced garlic
  • 1/2 tbs finely-diced chilli
  • sea salt to season
  • 200g durum wheat spaghetti
  • roughly chopped flat-leaf parsley
  • lemon wedge

Method:

  1. Boil salted water in a large saucepan and add spaghetti until cooked al dente and drain.
  2. Place extra virgin olive oil, crab meat, chilli and garlic in a cold pan, place on heat and fry until garlic start to caramelise.
  3. Add cooked spaghetti to pan and work through the crab mixture.
  4. Continue to heat until the spaghetti starts to stick to the pan.
  5. Add salt to season plus liberal amounts of chopped parsley.
  6. Place in a serving bowl, sprinkle with more parsley and a little olive oil and add lemon wedge
