Crab Spaghettini
Ingredients:
- 3 tbs extra virgin olive oil
- 100g sand crab meat
- 1/2 tbs finely-diced garlic
- 1/2 tbs finely-diced chilli
- sea salt to season
- 200g durum wheat spaghetti
- roughly chopped flat-leaf parsley
- lemon wedge
Method:
- Boil salted water in a large saucepan and add spaghetti until cooked al dente and drain.
- Place extra virgin olive oil, crab meat, chilli and garlic in a cold pan, place on heat and fry until garlic start to caramelise.
- Add cooked spaghetti to pan and work through the crab mixture.
- Continue to heat until the spaghetti starts to stick to the pan.
- Add salt to season plus liberal amounts of chopped parsley.
- Place in a serving bowl, sprinkle with more parsley and a little olive oil and add lemon wedge
