Bruschetta with Goats Cheese, Truss Tomatoes and Vino Cottto

Bryce roasts little truss tomatoes, drenches them in Vincotto and puts them on the plate with a good dollop of goats cheese and a little tower of garlicky char grilled bread (lightly brush the sour dough or ciabatta with garlic oil before char grilling).

The idea is to spread the cheese over the bread and then squash the warm tomatoes on top. You get to decide how you like to eat it with more or less tomatoes, more or less goats cheese and any amount of Vincotto. Very yummy and make sure you mop up all the Vincotto!!!
